Plant-Based, Grain-Free Breakfast Burrito Recipe


There's nothing like a hearty breakfast burrito if you need comfort foods in the morning – whether you've had a hard night or just need extra energy through a hearty breakfast. To give it extra nutritional value, we have developed this vegetable burrito that does not contain much fat and sodium. This clean burrito version uses a ground mix of vegetable artisan instead of real meat, black beans, eggs and a cassava flour tortilla.

If you're looking for gluten-free or grain-free tortillas, Siete Foods is a great place to start. The vegetable minced meat we used comes from Lightlife and contains 20 grams of protein per serving, using only a handful of ingredients (it is also gluten-free for these tortillas).

To prepare these in advance (and if you are a 1 or 2 person household), wrap each burrito in aluminum foil, freeze it in a single layer, and then seal it in an airtight container. To heat, remove foil, cover with a damp paper towel and heat thoroughly in the microwave.

Makes 6 servings

ingredients

1 teaspoon rapeseed oil
1/2 white onion, diced
1/2 red pepper, diced
1 packet of hot taco spice mixture (or make your own spice)
A 12 ounce container of Lightlife Plant-Based Ground
cooking spray
3 big eggs
A 15 1/2 ounce can of black beans, drained and rinsed off
6 Siete Cassava Flour Wraps
1/4 cup grated cheddar cheese
Hot sauce
Fresh coriander

How to do it

  1. Heat the rapeseed oil in a medium pan and sauté the onion and pepper over medium to high heat. Stir occasionally and cook for about 3 minutes until the onions are translucent and the paprika is soft. Add the taco seasoning and stir. Add Lightlife Ground to pan and use a spoon to squeeze into a single layer and chop into small pieces. Cook for 5 to 7 minutes, stirring occasionally until completely browned.
  2. In a separate small pan over medium heat, sprinkle with pan, add eggs and whisk to a scrambled egg. Remove from heat.
  3. Heat cassava wraps a few seconds on the stove. To assemble the burrito, layer the Lightlife grounds, scrambled eggs, black beans and cheese. Top with spicy sauce and fresh coriander. Serve or wrap immediately and freeze for later.
